How to Make Christmas Tree Meringue Cookies

Let’s go step by step on how to make these meringues and, at the end of this post, we’ll have a printable recipe card for you to print out and reference.

First up, ingredients…

Here is the ingredient list:

  • 2 egg whites
  • 1/8 tsp cream of tartar
  • 1/2 cup sugar
  • 1 tsp vanilla sugar
  • variety of sprinkles
  • green food coloring
  • wooden or plastic sticks/skewers

If you don’t have, or want to buy, vanilla sugar, just substitute about a teaspoon of vanilla extract.

Steps to Make Christmas Meringues

First, you will want to mix the egg whites in a bowl with cream of tartar. Beat at low speed until a slight foam appears.

Start adding sugar and vanilla sugar. Do this in three steps, approximately 20 seconds apart.

Add your green food coloring. Transfer the colored and white meringue to a piping bag fitted with a star nozzle.

Line a baking sheet with parchment paper. Add a strip of green icing onto your parchment and place a popsicle stick on each.

Holding the piping bag upright, pipe out the meringue in the shape of a Christmas tree.

Next, sprinkle the meringue trees with sprinkles of your choice and place the baking sheet in the oven.

Resist the urge to open the door for the first hour. If you want the Christmas trees to remain soft inside, remove the meringue after 1 hour 30 minutes (total). For drier meringue, increase the bake time to 2 hours.

Ingredients

  • 2 egg whites

  • different confectionery toppings/sprinkles
  • green food coloring
  • wooden skewers

Instructions

Preheat oven to 160F. Mix the egg whites in a bowl with cream of tartar and beat at low speed until a slight foam appears.

Start adding sugar and vanilla sugar. Do this in three steps, 20 seconds apart.

The finished meringue will be dense and fluffy. It does not hang or drip from the whisk. This result will be obtained in about 6-7 minutes from the start of whipping. The time may be longer if the mixer power is low. This is how French meringue is prepared.

Add green food coloring to the meringue and stir. You can set aside a little white meringue in advance, then mix it with green and make an imitation of white snow on the Christmas trees.

Transfer the colored and white meringue to a piping bag fitted with a star nozzle.

Line a baking sheet with baking paper. Apply meringue strips and place Christmas tree sticks on top.

Holding the piping bag upright, lay out the meringue in the shape of a Christmas tree.

Sprinkle the Christmas trees with confectionery toppings and put the baking sheet in the oven. Don’t open the door for the first hour. If you want the Christmas trees to remain soft inside, remove the meringue after 1 hour 30 minutes (total). For dry meringue, increase the drying time to 2 hours.
